Our panettone is a seasonal sourdough collaboration with Infermentum, our friends in Verona, Italy. The dough is naturally leavened, and this year we have two different panettone. One is studded with dark chocolate, sea salt, and fresh lemon peel preserved only with water and sugar following an ancient French method, available for nationwide shipping on Goldbelly. The other is the Semplice – the same wild, naturally leavened dough flavored with traditional lemon, orange and vanilla, but without the addition of any chocolate or candied fruit; the focus is entirely on the dough.
