Why we're moving to reservation-only service IN 2026

As we head into our 30th year in business, we’ve been reflecting on how we can continue improving every part of what we do. We’re deeply grateful for the support we’ve received over the years, and we never take that for granted.
For the last few years, we’ve set aside a small amount of dough and space for walk-ins each night. Even with many attempts to explain how our limited, hand-made production works, we know it has still led to frustration for guests who arrive hopeful, only to find we’re sold out.
After a lot of thought, we’re moving to reservation-only service so we can better meet expectations. Here’s why we made this decision:
 

Clearer expectations

Our owner Anthony Mangieri makes a limited number of dough balls each day, intentionally and by hand, and demand exceeds what we can produce while maintaining the highest standards. Reservations help ensure that when you plan a visit, you know you have a seat, rather than waiting in line with uncertainty.

 

Transparency about reservations

Reservations open two weeks in advance at 9:00 AM ET on OpenTable. Because interest is high, they go quickly, but we want to be clear:

  • They fill fast simply because demand is greater than the number of seats available.

  • It can feel a bit like a lottery, but it does work, and cancellations do happen.

  • Reservations are rarely taken by bots. If we identify that a reservation has been traded or purchased through third-party platforms, it will not be honored.

  • We strongly encourage using the “Notify Me” feature on OpenTable (here’s how). When cancellations or no-shows occur, we reach out to guests on the Notify List first.

 

Protecting our reservations

To ensure reservations go to real guests, not bots or resellers, we work closely with OpenTable on multiple safeguards designed to prevent abuse.

All reservations require credit card verification and fraud screening at the time of booking. This helps confirm card validity and flag suspicious or automated activity, reducing no-shows, last-minute cancellations, and reservations made with the intent to resell.

OpenTable also has a dedicated fraud team that continuously monitors for abusive behavior, including the use of bots, scraping tools, or attempts to resell reservations. Accounts found to be in violation are subject to cancellation. In addition, OpenTable actively supports industry-wide efforts to combat reservation piracy, including backing the Restaurant Reservation Anti-Piracy Act, which became law in New York in June 2024.

Together, these measures help keep reservations fair, secure, and accessible to guests who genuinely want to dine with us.

If you don’t have a reservation and are in the neighborhood and would like to join us for a drink, appetizer, or dessert, please stop in. We’ll always do our best to accommodate you. Guests without reservations may also request to be added to our waitlist in the event of a cancellation. Please note that waitlist availability is not guaranteed and is subject to real-time changes throughout the evening.

You can also set the “Notify Me” feature on OpenTable. If a table opens up last-minute, we’ll contact guests on the list as soon as possible.
